If you activate Sundial of the Infinite during your upkeep, which step are you now on? The begining of your end step, or the end of your end step? If it is the begining, would effects that trigger at the begining of the end still activate?

Neither of those are actually steps. The end phase consists of the end step followed by the cleanup step. You can't skip to the "end" of a step. When something triggers at the beginning of a step, that means it triggers when the game enters that step.
