I Mind Control Buy my opponents Sentinel Spider Buy then during his turn, he attacks me with another Sentinel Spider Buy.

I block his attacking Sentinel Spider Buy with the one I used Mind Control Buy on but then I cast Disperse Buy targeting my Mind Control Buy.

Do both Sentinel Spider Buys die and I get the Mind Control Buy back?

AND ALSO,

Can I target at tapped permanent with a "tap target permanent, it doesn't untap...." spell?

Here is what I think happens. First, you need to cast your disperse before damage is dealt after you declare your spider as a blocker. The spell resolves and your opponent gains back control of his spider. It is removed from combat, but his attacking spider is still considered blocked. So you don't get hurt, but your opponent now has two spiders.

And finally, yes you can target a tapped creature with a spell that says to tap target creature, it doesn't untap. Unless the card specifically says you can't target a tapped creature.
